Spice Up Your Day with a Bowl of Soulful Sambar!
We’ve bottled up all of Amma’s best-kept secrets in our Sambar spice blend, but why stop there? Here’s her special sambar recipe to bring the magic home. Ready to whip up a delicious, aromatic sambar that’ll have everyone asking for seconds? Let’s go!
Serves 4
You’ll Need:
1 cup toor dal (yellow lentils) – because good things start with good dal!
2 cups chopped veggies (carrot, beans, drumsticks – your call!)
2 cloves garlic (optional, but c’mon, it’s garlic!)
A few curry leaves – tiny leaves, big flavor!
Salt to taste – don’t be shy!
1 tbsp tamarind pulp – the zing factor!
1 tbsp oil or ghee – liquid gold!
1 tsp turmeric powder
A pinch of asafoetida (hing)
1tsp mustard seeds
1 tsp fenugreek (methi) seeds
Chopped coriander
2 tbsp The Masalai House Sambar Masala – the magic ingredient!
Let’s Get Cooking!
Pressure cook dal with 2 cups of water until soft. Mash it up like you mean it!
In a separate pan, add your choice of vegetables, pour in some water, and let them cook.
Once they are half-boiled, stir in tamarind (imli) water, turmeric powder, curry leaves, asafoetida (hing), a pinch of salt, and the secret to the perfect sambar—The Masalai House Madras Sambar Masala. Let everything simmer until the raw aroma of tamarind and spices disappears.
Now, mix in the cooked dal and let it cook for a final 5-minutes into a soupy, spicy, tangy perfection.
For the finishing touch, heat some ghee, add mustard seeds and fenugreek (methi) seeds, and chopped garlic (optional), and let them sizzle. Pour this tempering (tadka) over the sambar, give it a quick stir, and it’s ready to serve.
